The superb taste of these rolls is just too perfect! My only advice to you is to be very generous with the amount of cheese that you are going to add. Just do it and thank me later! These delicious treats will never fail to make your day extra special. Enjoy!
Ingredients:
1 c cooked chicken finely chopped (rotisserie, poached, etc)
3 tbsp red onion finely chopped
1 ¼ c part-skim mozzarella cheese shredded, divided
3 slices bacon cooked crisp, drained, and finely chopped (optional)
½ c BBQ sauce (sweet) plus extra for serving
1 tsp vegetable oil for greasing the pan, plus more for oiling the bowl
1 lb. pizza dough fresh, frozen or refrigerated, thawed
¼ teaspoon crushed red pepper flakes optional
fresh parsley leaves chopped for garnish
Directions:
Thaw the pizza dough at room temperature.
Apply cooking spray in a 10-inch round skillet.
Prepare the oven and preheat to 200 degrees C or 400 degrees F.
Sprinkle flour onto a flat surface, then lay the dough on it. Unroll to about an 18×10-inch rectangle shape.
Add the BBQ sauce over and spread it evenly. Make sure to leave a 1/2-inch border to the sides.
Sprinkle 1 cup of mozzarella cheese on top.
Add the onion, bacon, chicken, and red pepper flakes over the BBQ sauce.
Roll the dough from end to end to make it into a cylinder. Seal the sides.
Slice the dough into 8 even pieces.
Place them inside the preheated oven and bake for about 25 minutes or until done.
Sprinkle a generous amount of mozzarella cheese on top and bake for 5 more minutes or until the cheese has melted completely.
Remove from the oven and sprinkle freshly chopped parsley on top to garnish.
Serve with more BBQ sauce and enjoy!
