Ingredients:
8 Boneless skinless chicken breasts about 2 pounds
Marinade:
2/3 bunch fresh cilantro
zest of 1 lime
3 tablespoons lime juice about 2 limes
3 cloves garlic chopped
1 teaspoon ground coriander
1 teaspoon salt
1 teaspoon black pepper
2 tablespoons olive oil
Optional Garnishes:
Cilantro leaves
Lime wedges
Directions:
Add all the marinade ingredients into a food processor, then pulse until well blended.
Put the chicken breasts and marinade inside a resealable bag. Remove the air, then seal the bag.
Massage the chicken breasts until well coated with the sauce.
Place it inside the fridge to marinate for about an hour or overnight.
Apply cooking spray on a grill, then turn the heat to medium-high.
Add the chicken breasts and cook each side for 5 minutes or until nicely charred.
Place the chicken breasts onto a clean serving plate.
Sprinkle freshly chopped cilantro on top and lime wedges on the side.
Serve and enjoy!
Notes:
Make sure to pound the chicken breast gently with a meat mallet. This will help tenderize the chicken.
I prefer marinating the chicken overnight for the best flavours.
Adding oil over the grill is also very important. It will prevent the chicken from sticking.
