Ingredients:
2 onions, sliced
2 c sharp cheddar cheese
3 lbs. potatoes, peeled and sliced (about 8 to 10 potatoes)
2 c cooked ham, diced
1 can (10.75 ounces) condensed mushroom soup
2 tbsp fresh parsley, finely minced (optional)
1/2 tsp garlic powder
1/2 c milk
1/2 tsp pepper
1/2 tsp salt
Directions:
Grate the cheese, slice the onions into thin cuts, mince parsley, and slice the peeled potatoes to about 1/4-inch thick. Use paper towels to pat dry the potato slices.
Add the grated cheese, onion slices, and ham slices into a large bowl. Mix everything by hand.
Scatter 1/2 of the potato slices to the bottom of a slow cooker.
Top with cheese, onion, and ham mixture. Repeat the process until everything is arranged in layers.
In the same bowl of the ham mixture, add the milk and mushroom soup. Stir until well blended.
Season with salt, parsley, garlic salt, and pepper. Stir until well mixed.
Cover the slow cooker and cook for about 4 hours on a high setting.
Let the potatoes rest for a few minutes at room temperature.
Serve and enjoy!
